Fiery Grandma’s Easy Bake Lasagna

 

This has come to be my signature dish of all the meals I’ve cooked for my family over the years. As a working mom and grandma I don’t have time to mess with pre-cooking the noodles, then cooling them and cooking and baking all day long. So, here is my recipe for making a hearty lasagna dish that is sure to please the pasta lovers in your home, too.

 

Fiery Grandma’s Easy Bake Lasagna

 

Prep time – 30 minutes

Bake time – 45 minutes

Standing time – 15 minutes

 

You’ll need the following:

Preheat oven to 375*

One 9″ x 13″ baking dish (I use my old standby Pyrex casserole dish)

One medium bowl

Aluminum foil 

 

Ingredients:

10 – 12 wide lasagna noodles (uncooked)

(1) one jar of Prego with sausage spaghetti sauce

1 – 1 1/2 pounds of lean ground beef

1/2 medium onion – chopped 

16 ounce small curd cottage cheese

2 eggs

1 – 1/2 pounds of Colby Jack cheese – shredded

 

Start by crumbling the ground beef into fry pan, saute with chopped onion and salt and pepper to taste until there is no more pink in meat. Drain fat. Add jar of spaghetti sauce, add water to empty jar, about 1/4 jar. Put lid back on and shake (this gets all the sauce out of jar) pour water into pan with sauce and meat, stir. Let simmer.

Next, transfer cottage cheese into medium bowl, add the eggs and stir together blending well, set aside. Shred Colby Jack cheese and set aside.

Now that your meat and sauce are hot, layer in baking dish as follows: small layer of meat sauce on bottom of dish followed by noodles. Coat noodles with cottage cheese and egg mixture, not too thick and follow with layer of cheese. Repeat layers until all ingredients are gone and top off with cheese.

Cover your dish with aluminum foil making sure to crimp edges to keep steam in. Place lasagna dish in preheated oven at 375* for 45 minutes. Do not remove foil and allow to sit on top of stove for 15 minutes while you prepare green salad and french bread to side with your Fiery Grandma’s Easy Bake Lasagna.
